Mincemeat Cookies Mix together: 3 1/2 cups flour 1/2 tsp. salt 1 tsp. baking soda 1 C. Crisco 1 1/2 C. sugar 3 eggs, well beaten 1 1/2 C. mincemeat (1/2 jar) Bake at 400°F for 12 min. |
Mincemeat Cookies
1/2 teaspoon salt 1 teaspoon baking soda 1 cup solid vegetable shortening 1 1/2 cups sugar 3 eggs 1 1/2 cups mincemeat (see note) 1. Preheat oven to 400°F. 2. Combine the flour, salt and baking soda and set aside. 3. Beat the shortening and sugar together on medium speed until smooth and creamy. 4. Add the eggs and beat until thoroughly combined. 5. With the mixer set at low speed, add the flour mixture one-third at a time and mix until combined. 6. Fold the mincemeat into the mixture. 7. Spoon mounds of the dough (about 2 tablespoons each) about one-inch apart on an ungreased cookie sheet. 8. Bake for 10- 12 minutes or until brown around the edges but still slightly soft in the middle. 9. Carefully remove to a rack to cool. Yield: about 5 dozen soft cookies. Note: Mincement is a mixture of chopped apples, spices, suet, raisins, etc., used as a pie filling. It is available in jars in many grocery stores, particularly during the winter holidays.
